Break the ginger root into 1-2 inch pieces (no need to peel if organic)
Add ginger root and water to a high powered blender
Blend until smooth
Pour into a mason jar through a fine-mesh strainer. You will need to press the juice through the strainer with the back of a spoon because it gets frothy and thick. Compost or store leftover pulp for another recipe.
Store in the refrigerator for up to 1 week.
Add 1 tsp - 2 TBS to water or tea 1-2x/day. Great with freshly squeezed lemon juice!
